Coconut Quinoa Pancakes


Coconut Quinoa Pancakes

Coconut Quinoa Pancakes
(can be shared with kids 8+ mos)*
makes about 12 pancakes
1 cup all-purpose flour or gluten-free flour blend
1 cup quinoa flour or quinoa flakes (see note above)
1/2 cup shredded coconut (I prefer unsweetened)
2 tablespoons light brown sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1 1/2 cups milk or almond milk 
2 tablespoons canola oil, plus more for cooking
1 teaspoon vanilla extract
2 eggs
1. Combine flour, quinoa flour, coconut, brown sugar, baking powder and cinnamon in a medium bowl. Whisk to work out all of the clumps.
2. In a separate bowl, whisk together the milk, oil, vanilla and eggs until well combined.
3. Add the wet ingredients to the dry, whisking all the while until well combined. The batter will have texture because of the coconut (and quinoa flakes, if using), but should not have lumps.
4. Heat a well oiled pan or griddle over medium heat. Add batter in 1/4 cup scoops and cook until bubbles just begin to form around the edges. (Unlike most pancake batters, this will not bubble vigorously—you’re looking for just a couple of bubbles.) Flip and cook for another two minutes, until golden brown and cooked through. Serve immediately, with a drizzle of honey or warmed maple syrup.
*Note: These make a great early finger food! If your child is not yet managing soft finger foods by 8-months-old, hold off on serving these. Otherwise, cut into age appropriate bites and serve. Skip the honey for children under 12-months-old (it’s not safe for children under one) and consider skipping the syrup, too. These have a tiny bit of sweetness on their own that should be enough for early eaters.

Vanilla/almond pudding sauce for pancakes


Vanilla Pudding Sauce
2 Tbsp cornstarch
1/3 cup sugar
1/8 tsp salt
2 cups milk
2 egg yolks, beaten
1 Tbsp butter
2 tsp vanilla
2 tsp almond extract (optnl)
Mix cornstarch, sugar, and salt in a saucepan. Whisk together milk and egg thoroughly, and gradually stir in. Cook over medium heat, stirring constantly, till mixture comes to a boil. (Don’t be tempted to turn up the heat; if it gets hot too fast, the egg will cook. And scrambled eggs in vanilla sauce would be bad. Really, really bad.) Boil for at least 1 minute, still stirring constantly. Remove from heat and stir in butter and vanilla. Serve warm or chilled.

Power Muffins

Warning: these are healthy and yummy!

Follow these instructions:

Chop 2 cups of dates and place them in your blender. Add 2 cups of hot water. Blend into a liquidish mixture. Add 1 cup of oats and 2 tsp baking soda. Pulse in blender. Add 1/2 cup brown sugar, 1.5 tsp salt, 2 tsp vanilla, 1/4 cup buttermilk, 2 TBSP coconut oil, 2 eggs. Blend together.
In separate bowl combine 1 cup flax meal, 1 cup almond meal, 1 cup oat bran, 2 TBSP pamelas baking mix flour.

Mix wet and dry ingredients together.
Add 1 cup chocolate chips (and walnuts if do desired).

Bake at 350 for 15-20 minutes.(check the muffins after 15 mins)

Almond flour pancakes

1 1/2 cups almond meal*
3 eggs
1/4 cup milk of your choice
1 t vanilla extract
2 T maple syrup
1/2 t baking soda
1/4 t salt
1 t ground cinnamon

*almond meal can be made by pulsing raw, blanched almonds in your food processor/blend tec blender until they are finely ground and look something like this

Mix all the ingredients well.

In a medium fry pan or skillet over medium-low heat, spray the surface with cooking spray and dollop 2 heaping T of batter per pancake. Cook for 3 to 4 minutes or until golden brown, and then cook an additional 1 to 2 minutes on the other side.

Top with garnishes of your choice (i.e. nut butter, bananas, berries, maple syrup, agave syrup, cinnamon + sugar, whipped cream, Greek yogurt).

Makes 10 pancakes

Apple Cinnamon Quinoa

1/2 cup water
1/2 cup vanilla soymilk or whatever you have in your fridge!
1/2 t pure vanilla extract
1/2 cup quinoa
1 large Braeburn, Fuji or Gala apple, diced
1 T honey
1/2 t cinnamon
Pinch nutmeg
1/4 cup almonds & walnuts, crushed

To make quinoa, mix water, soymilk, vanilla and quinoa, and cook in your rice cooker.

Just before serving, microwave the diced apple for 1 minute (should be slightly softened and warmed). Mix the apple, honey, cinnamon and nutmeg with the cooked quinoa.

To serve, divide into two bowls and top with the crushed nuts. Add a dollop of Greek yogurt, sprinkle of cinnamon and a drizzle of honey, and enjoy!

oatmeal

Oatmeal with 1/3 C. almond milk. Banana and walnuts on top. Sprinkle on some cinnamon too. So simple and easy. healthy food can be fast! Sometimes I add 1 tbspoon of almond butter and stir it in.

POWER-PACKED GRANOLA CEREAL

POWER-PACKED Granola cereal
  • 1/3 c rolled oats (regular oats would work too)
  • 1 t sunflower seeds
  • 1 t shelled pumpkin seeds
  • Dried fruit of your choice
  • 1 T chopped raw walnuts
Combine all ingredients and top with milk. I used unsweetened vanilla almond milk and it was so good!

apple oatmeal

Back to pureeing... I pureed some apples and then froze it in a ice cube tray. Then made oatmeal and added the apple ice cubes to melt in the hot oatmeal... Then sprinkled some nutmeg and cinnamon onto it. YUM! It was like adding the apple butter to it. So good. I didn't even have to add sugar or anything.

Oatmeal:
Cook one cup of oats with two cups of water. Bring to boil, then simmer for a few minutes. To help cool off the oatmeal to give to a hungry child, add three or four cubes of apple puree. This will cool the oatmeal and add a nice sweet taste without adding sugar.

Green monster

The Green Monster


Ingredients:
2 Cups Raw Baby Spinach
1 Tbsp Ground Flax Seed
1 Cup Almond Milk (I prefer Unsweetened Vanilla)
1 Banana
Ice

Directions:
Combine all ingredients into blender in the following order: flax seeds, spinach, banana, milk, and ice. Blend well. Drink up!

Strawberry syrup

4 cups diced fresh strawberries
½-¾ cup sugar, depending on your taste
½ cup water
1 tsp lemon juice
1 Tbsp cornstarch
3 Tbsp water

Add strawberries to a medium saucepan. Set heat to medium high. Add sugar, water and lemon juice. Once the water is boiling, start mashing the strawberries with a masher. Stir occasionally until strawberries are broken down and sauce has thickened slightly.

In a small cup combine the cornstarch and water. Remove pan from the heat and stir in the cornstarch mixture. Use immediately or cool and store in an air-tight container. Serve syrup over waffles, pancakes or ice cream.

Power Granola

2 cups regular oats
1/3 cup ground flaxseed
1/4 cup chopped walnuts
1/4 cup chopped slivered almonds
2 teaspoons ground cinnamon
1/3 cup orange juice
1/3 cup honey
1/4 cup packed brown sugar
2 teaspoons canola oil
1 teaspoon vanilla extract
Cooking spray
1/3 cup dried cranberries

Preheat oven to 300°.

Combine first 5 ingredients in a medium bowl.

Combine orange juice, honey, and brown sugar in a small saucepan. Cook over medium heat just until sugar dissolves, stirring frequently. Remove from heat; stir in oil and vanilla.

Pour honey mixture over oat mixture, stirring to coat. Spread mixture in a thin layer onto cookie sheet coated with cooking spray.

Bake at 300° for 10 minutes; stir well. Bake an additional 15 minutes or until golden brown. Spoon granola into a bowl; stir in dried cranberries. Cool completely.

Makes 4 3/4 cups. Each serving is 1/4 cup at 93 calories.


Oatmeal

2 Cups of rolled oats
2 Cups almond milk
1/2 tspoon vanilla extract
1/4 C. chopped pecans or walnuts or almonds
1-2 Cups of fresh fruit sliced. (peaches, apples, banana...)

Combine oats, milk and vanilla. Cover and refrigerate overnight. Combine Oatmeal with nuts and fruit. Serve cold or hot!


Crispy huevos racheros

2 Cups of crushed tortilla chips
4 eggs
1 C. fresh salsa
pepper
3 Tbspoons Green onions
2 Tbspoons Cilantro
1 avacodo chopped
1 tbspoon coconut oil or olive oil
1/4 C. black beans

add oil to cooking pan. Pour 1/2 C. salsa. use spatula to clear two 3 inch circles in center of pan. Crack an egg in each circle. Cook til firm.

Quickly heat tortilla chips in a hot skillet until soft. Place one cup of tortilla chips on plate and slide eggs and salsa onto chips. Repeat with remaining eggs and salsa and tortilla chips.

Garnish with cheese, onions, cilantro, beans and avacado.

Puerto Vallarta Quiche

1 Tbspoon Coconut oil
large Zucchini
1 Cup Shredded Mexican White Cheese
1 Green bell pepper cut into thin strips
1 red bell pepper cut into thin strips
1/2 Cup Fresh salsa
1/3 Cup diced green chilies
6 eggs
1 Cup almond milk
pepper

Preheat oven to 375. Use coconut oil to oil the bottom and sides of 9x13 casserole dish. Slice zucchini into long thing strips and place on bottom of the pan. (this is the crust). Sprinkle 1/2 C of Cheese next. Place peppers, salsa and green chilies next.

Beat eggs and almond milk-season with pepper. Pour the egg mixture over the veggies and then use the rest of the 1/2 C. of cheese on top. Bake 45 minutes or until firm.

Cover with foil if top browns too quickly.

breakfast burrito

Breakfast Burrito (Or anytime of the day, of course)

2 eggs scrambled
1/4 cup red and orange peppers, chopped
2 Tb refried beans, fat-free
Brown rice tortilla (the best, and also expensive... boo)
2 Tb cheddar cheese, reduced-fat
1 or 2 pieces of turkey bacon
2 Tb salsa
freshly ground pepper to taste

add everything to brown rice tortilla. yummmmmy!

Banana Protein pancakes (or waffles)

1/4 C. oats
1 Banana (Especially good if banana is almost bad)
2 Tb. protein powder
4 eggs
1/2 Tsp. baking powder
1 tsp. dark coco powder (optional)

Blend everything together in blender (will be very runny batter).

Then you can either make small pancakes or medium size waffles. I think the waffles are easier.

Makes about 6 small pancakes or 5 waffles. You will want to double the recipe for sure because they go fast!

Brown Rice tortillas

I found brown rice tortillas at good earth that are Super good!! They come in a pack of 6 and were in the fridge part of the good earth near the back of the store (Orem location). I've had egg and meat burritos. oh ya

Delicious shake ideas

1 scoop of protein powder
fruit of your choice (banana, strawberries, blackberries ect...)
1/4 C. oats
1/2 C. water
ice cubes


Another idea, take the 1/4 C. oats out, blend everything else and then add 1/2 C. of rice crispy cereal.

Or, instead of 1/2 C. of water, replace with milk.
