In the crock-pot combine:
1/2 chopped onion
2 cloves garlic minced
3 cups hard black beans
2 heaping teaspoons cumin
2 teaspoons oregano
1/2 tablespoon salt
4 cups water
3 or 4 chicken breasts (not frozen)
Cook on high 5 hours. Shred when cooked.
Great for mixing with eggs and potatoes in a skillet or over a bed of greens with corn chips for a salad.
